Pea shoot and peach smoothie

When summer gets here I find myself skipping breakfast more and more often, simply because the heat causes me to be more thirsty than hungry. In an effort to combat this I have taken up making smoothies every morning. They are delicious, healthy, and my body looks forward to them, even on a 90 degree day.

Typically I don’t worry too much about the recipe. I just throw a couple spoonfuls of yogurt, a splash of milk, some frozen fruit, and a large handful of greens into a blender and press start. The result is always different and I like the creativity it affords me each morning. But, a few days ago I tried a winning combination that tasted fresh, sweet and bright and I simply have to share it.

It is the perfect smoothie for a hot summer morning. The peaches give it that summer taste, juicy and sweet. Growing up in Michigan near the “fruit belt” I know that there is nothing better in summer than a sun ripened peach fresh off the tree. The pea shoots bring a balance to the smoothie, offering a bright, green flavor that reminds me of the smell of a fresh cut lawn.

*Just a quick disclaimer: I have a very small sweet tooth, so for those of you that like your smoothies more sweet you may want to add a spoonful of apricot jam or orange marmalade to bring up the sugar content.

 

Ingredients

1 cup plain yogurt

1 cup whole milk

1 cup pea shoots

2 cups frozen peaches

 

Directions

This is so simple. Put all ingredients in a blender and blend! Enjoy!
